ingredients
- 230g unsalted butter (room temp)
- 1 egg
- 200g caster sugar
- 1/2 teaspoon salt
- 250g plain white flour
- 1 teaspoon vanilla extract
- turbinado or demerera sugar, for dusting
method
1) preheat oven to 200 C. chill an ungreased baking sheet in the freezer
2) using a hand mixer, cream the butter, egg, sugar and salt
3) add the flour & vanilla and mix until the mixture holds together in large clumps (you may need to use your hands)
4) using your hands, press the dough onto the baking sheet until flat. dust top generously with sugar
5) bake until edges begin to brown (8-10 mins). leave 5 mins, then cut and transfer to rack
